1 & 1/2 cup All-purpose Flour
1 teaspoon Salt
1 stick of chilled Butter (1/2 cup)
1/4 cup Ice Water
Add Flour & Salt to a mixing bowl. Cut in the Butter with your hands so the mixture resembles a coarse meal. Add water 1 tbsp at a time so the dough barely sticks together. Form into a ball, cover with a saran wrap, and place in fridge to chill for 1-2 hours or the freezer for 30 minutes.
Galette filling ingredients...
1-2 tbsp Olive Oil
1 cup Onion (diced or roughly chopped)
1 tbsp or 2 medium Garlic Cloves (chopped)
1/2 tsp Salt
1/4 tsp Black Pepper (cracked)
2 Springs fresh Rosemary or 1/4 tsp dried
6 Mushrooms (sliced)
1/2 lb Ground Beef (85/15 fat ratio)
2 handfuls of Spinach Leaves
1-2 Tomato (sliced)
1/2 cup Goat or Feta Cheese
While dough is chilling, prepare the filling. Heat up a pan on medium heat for a minute & half. Add Onion, Garlic, Mushrooms, Rosemary, Salt, & Pepper and cook about 3 or 4 minutes. Create some space in the middle of the pan and cook ground beef for one more minute. Remove from heat toss in two handfuls of Spinach leaves.
Roll out the dough on a floured surface and place into a baking sheet. Add the filling, Tomatoes & Goat cheese on the dough leave about 2 inches of space around the edges. Gently bring the edges in so it folds on top the filling. This should resemble an open faced Pie. Bake for about 30-40 minutes on 400F.
