1/2 cup boiling Water
1/2 cup Couscous
Salt & Pepper to taste
1/4 lb ground Beef
1/2 cup Onion (diced)
1-2 Roma Tomatoes (diced)
1 handful Carrot ribbons
1/4 tsp Cinnamon
1/8 tsp Nutmeg
1/2 tbsp Olive Oil
Preheat oven to 400 F.
Remove the top off the Pumpkin and scoop out seeds (same process you use to start carving).
Season the inside with Salt, Pepper, & drizzle of Olive oil, place the top back on the Pumpkin, & bake for about 20 minutes.
While Pumpkin is baking, cook the Couscous by placing it in a bowl with a pinch of Salt, Pepper, drizzle of Olive Oil, & 1/2 cup of boiling Water.
Place a plate or seran wrap on top of the bowl and set aside until Beef is cooking.
In a mixing bowl add Beef & diced Onion, and season with Salt, Pepper, Cinnamon, & Nutmeg.
On a hot pan drizzle 1/2 tbsp Olive Oil & toss in the Beef mixture and cook for one minute.
Turn off the heat and add all the remaining stuffing ingredients & mix to incorporate.
Remove Pumpkin from oven, place stuffing into the Pumpkin, and bake for 10 more minutes.
Serve with a sprinkle of your favorite cheese.
