1 medium onion (roughly chopped or diced)
3 cloves garlic(crushed)
2 stalks celery(roughly chopped)
2 potatoes(quarter & thinly sliced)
1 carrot (thinly sliced)
1/4 of a cabbage (thinly sliced)
3 thyme sprigs or 1/2 tsp dried
2 Bay leaves
4 medium rosemary sprigs or 1/3 tsp dried
3 Italian sausages or 1/2 lb stew beef
1 tsp salt & pepper or adjust to taste
1/2 tbsp olive oil
4-5 cups boiling water
Heat a dutch oven on medium heat for a couple of minutes. Add olive oil and sauté onion pieces for a couple minutes. Season with salt and pepper. Add celery and garlic to the pot and cook for another minute.
Create a well in the middle of the pan and sear sausage pieces for about 2 minutes of both sides. Remove sausage from the pot and set aside for later.
Toss in potato pieces, rosemary, thyme, and 2 cups boiling water. Stir the mixture and cook for another 3-4 minutes.
Once potatoes have cooked for a few minutes, add carrots and cook for another couple of minutes.
Add cabbage strips, sausage, few more cups of water. Cover the pot with a lid and cook for about 10-15 more minutes on medium heat.
*If making a beef stew cut vegetables into larger pieces and simmer stew for one or two hours on medium low heat.
Garnish with chopped parsley and enjoy!
