Bake Eggplant for about 25 minutes.
First prepare the Eggplant by slicing it lengthwise into about 3 or 4 slices. Rub the Eggplant slices generously with 1/3 tbsp of Salt and set aside for 15 minutes.
Prepare the Yogurt Sauce- 3 - 4 tbsp Plain Yogurt- 1 tsp Honey- 2 Mint leaves (chopped)- Pinch of Salt - 1-2 tbsp Blueberries- 1/4 tsp Cardamom
Mix all the ingredients together in a mixing bowl and set it in the fridge to chill.
Cabbage Couscous stuffing- 1/2 or 1/4 of an Onion
- 2 Garlic cloves- 1/2 tbsp Olive Oil- 1/4 of a medium sized Cabbage- 1/2 tsp Tarragon- 1/2 Salt - Freshly cracked Pepper- 1/4 cup Couscous- 1 Tomato (diced)- 1/2 cup boiling Water
Saute Onion and crushed Garlic for a couple of minutes on a hot pan with Olive Oil. Add Cabbage strips to the pan and cook for another couple of minutes. Add the remaining spices, Couscous, and Water to the pan. Turn off heat, close the lid on the pan, and set aside until later.
Remove Eggplant from the oven, place stuffing on top of the Eggplant, and drizzle with Yogurt Mint Sauce.
