1 cup Sweet Potato and Carrot pieces
1/2 cup Onion
1/2 cup Tomato
1 Garlic clove
Salt & Pepper to taste
3/4 tsp Cumin
1/2 tsp Paprika
1/2 tbsp Olive Oil
1/2 tbsp Butter
2 - 3 tbsp Cheese of choice
Cut all the vegetables into small cubes.
Heat a pan on medium heat for a minute, drizzle Olive oil, and cook Onion for about a minute.
Grate Garlic into the pan and allow to cook for another minute.
Add the Sweet Potato, Carrot, Butter into the pan.
Season the mixture with all the spices, add Water, cover the pan with a lid, and cook for about 3 to 4 minutes.
Toss in the Tomato and Kale at the end and cook for another minute.
Fill Tortillas with the vegetable filling & Cheese of your choice.
Melt butter in a separate pan, sear Quesadillas for about a minute and half or until golden brown.
