First, score the Salmon skin with a very sharp knife. Season with Salt & Pepper and set aside.
3-4 pieces Salmon Fillets
1/2 tbsp Olive Oil
1/2 tbsp Butter
Salt & Pepper to taste
Next, Prepare the Tabouli Couscous Salad.
1 cup diced Tomato
1/2 cup chopped Parsley
Juice of 1 Lemon
2-3 Green Onion thinly chopped
3/4 cup Couscous
1 cup boiling Water
1/2 tsp Salt
Pinch of Pepper
1 tbsp Olive Oil
1/4 tsp All Spice or Cinnamon, Nutmeg, & Clove
Place 3/4 cup Couscous in a bowl.
Add 1 cup boiling Water, pinch of Salt, and 1/2 tbsp Butter.
Mix with a fork, cover with a plate or Saran Wrap, and set aside for 10 minutes.
Mix all the ingredients In a mixing bowl and mix until incorporated.
On a hot pan, drizzle 1/2 tbsp Olive oil and place Salmon skin side down on the pan.
Press down on the Salmon pieces gently to create a crispy and golden skin.
Add 1/3 tbsp butter and cook until the color of the Salmon changes 3/4 of the way(about 3 minutes depending on the size of the fish).
Season the other side with Salt & Pepper.
Flip to the other side gently and cook for just one minute.
Remove Salmon pieces from the pan & serve over a bed of Tabouli Couscous Salad.
