- 2 Tilapia Fillets ( Fish or Poultry of your choice)
- Parsley leaves (chopped)
- 1/2 Lemon (thinly sliced
- 1/2 of an Apple (thinly sliced)
- 1/2 tbsp Butter (thinly sliced)
- Few fresh or dried Thyme leaves
- 2 tbsp Broth or White Wine
Preheat oven to 380.
Place Fish Filets on a square parchment/wax paper. Season with Salt & Pepper. Layer the remaining ingredients on top of the Fish. Fold the parchment paper in half diagonally and seal the ingredients in the paper by folding the ends. Bake in the oven for about 10-12 minutes depending on the size of the fish.
For the warm salad
- 1/4 of an Onion (diced)
- 1/2 of a Carrot (diced)
- 1 ear of Corn (shucked)
On a hot pan, sauté diced Onion and Carrot for a couple minutes with Olive oil. Season with Salt & Pepper. Add Corn Kernels and cook for couple more minutes. If vegetables start to dry out or stick to the pan, add a splash of broth or water. Sprinkle in Parsley leaves.
Serve Fish over a bed of warm salad.
