1/4 cup Yellow Squash (shredded)
1/4 cup Carrots (shredded)
1-2 tbsp Onion (diced)
1-2 Kale Leaves (roughly chopped)
1/4 tsp Salt & Pepper
1/4 tsp Sage or Spice of choice
1-2 tbsp Dairy (Milk, Half & Half, e.t.c.)
1/2 tbsp Oil or Butter
Whisk Eggs for 30 seconds. Season with Salt, Pepper, & Sage.
Whisk one more time lightly & set aside.
Add all the prepped Veggies to the Frittata mixture & whisk lightly.
Heat an oven safe pan on medium low heat & turn the oven on to Broil on low.
Drizzle Oil on the hot pan & pour Frittata mixture making sure to spread the Veggies evenly.
Allow it to cook for about 4-5 minutes or until the edges are set when a spatula is the though it.
Place in the oven to finish cooking for about 1 minute.
Remove from oven, drizzle with Cheese of choice, & serve.
